Zucchini casserole with stove top stuffing and chicken

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Boil the zucchini and onion in water for 5 minutes; drain well. In a medium bowl, combine the soup, sour cream and carrots. Stir in the zucchini and onion and mix well.

  3. In a separate medium bowl, combine the butter and stuffing mix. Spread half of this mixture into the bottom of a 9x13-inch baking dish. Spoon the zucchini mixture over the stuffing, then top off with the other half of the stuffing.

  4. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until stuffing is golden brown.

Zucchini Stuffing Chicken Casserole

Ingredients

  • Creamy Sauce:
  • 3 tbs butter

  • 3 tbs all purpose flour

  • 3/4 cup chicken broth

  • 1/2 cup milk

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • Casserole Mixture:
  • 2 zucchinis, diced

  • 1 yellow onion, diced

  • 6oz box stove top savory herbs stuffing mix

  • 4 tbs melted butter

  • 4 cups shredded rotisserie chicken

  • 1/2 cup sour cream

  • 1/2 tsp salt

  • 1/2 tsp pepper

Directions

  • Preheat oven to 350 degrees.
  • In a large skillet over medium heat on the stove add the butter once it melts down whisk in the flour. Once the flour turns a golden color slowly whisk in the broth and milk lastly whisk in the salt and pepper if your creamy sauce is too thick whisk in more water until your desired consistency set to the side.
  • To a large bowl add the stuffing and 4 tbs of melted butter stir well to coat the stuffing in the butter. Remove 3/4 cup of the stuffing and set it to the side this will be the topping for the end. In the bowl with the majority of the stuffing add in the creamy sauce, rotisserie chicken, zucchini, onion, sour cream, pepper, and salt stir well to incorporate the ingredients.
  • Spray a 9×13 baking dish with non-stick spray. Pour the casserole out evenly on the baking dish sprinkle with the reserved stuffing. Bake for 40-45 minutes. Enjoy

Sprinkle the 1/2 cup reserved stuffing mix on top of the casserole and bake at 350 degrees for 45 minutes.

I can’t decide if the crunchy bits of stuffing on the top are my favorite or the tender bites of zucchini. I mean, I could have eaten this pan by myself, but ultimately decided to share it with my family (and they loved it too). 😊
