Simply combine a box of cake mix with oil, eggs, and mashed bananas. That's it! Of course, once you have mastered the basic version of cake mix banana bread, it is fun to play with with flavors and mix-ins to create a wide variety of flavorful quick breads.

  • 1 (15 1/4-ounce) box yellow cake mix

  • 1/3 cup canola oil

  • 3 large eggs

  • 1 1/2 cups very ripe mashed bananas (about 3 to 4 medium bananas)

  1. Gather the ingredients. Preheat oven to 350 F. Grease a 9 x 5-inch bread loaf pan and set aside.

  2. In a large bowl, combine the cake mix with oil, eggs, and mashed ripe bananas until smooth.

  4. Bake for 50 to 55 minutes or until a toothpick inserted in center of loaf comes out clean. Cool in the pan on a wire rack for 15 minutes.

  5. Loosen the sides of the pan with a knife and then remove the banana bread from the pan. Cool completely before slicing with a serrated knife, using a light sawing motion.

  6. This banana bread tastes even better the next day. Store the loaf tightly wrapped overnight, then slice and serve in the morning. If you can wait, it’s worth it!
