    Preheat oven to 450 degrees. Place hens in a roasting pan, breast sides up. Place 2 thyme sprigs and 1 lemon half in cavity of each hen. Loosen skin from breast, and place remaining thyme and the parsley underneath. Squeeze remaining lemon halves over hens. Rub butter all over hens. Season generously with salt and pepper.

  7. Allow the hens to rest for 10 minutes before carving or serving them.

Notes

  • To make cleaning easy, line the baking sheet with foil.
  • The vegetables and herbs stuffed inside the hens' cavities will flavor the meat as it cooks.
  • You should not crowd the baking sheets with the hens, otherwise, their skin won't crisp up properly and they will take much longer to cook.
